BLUEBERRY BAKED OATMEAL by The Eat-Clean Diet Vegetarian Cookbook
What could be better than blueberries, pecans, rolled oats, vanilla, nutmeg, and cinnamon all baked into one heavenly breakfast? Not much in my books.
This Blueberry Baked Oatmeal recipe is in the ranks with Tosca’s Lemon Cottage Cheese Griddlecakes and her French Toast. After 40 minutes of patiently waiting to dive into this bowl of clean goodness, I mindfully ate each scrumptious bite. I felt satisfied yet light. This is a breakfast that I would serve to any guests and I most definitely will make this luscious bowl of bliss again, both on and off season.

So this morning I weighed myself and was 189.1, which is 4 pounds down from two days ago.
I officially hate the scale
I mean, does any of it matter until I have hit that UGW number? How much fluctuation is standard?
I weighed myself in the same spot, wearing the same level of clothing at the same time of day.
The not eating and the working out is what’s supposed to be hard. Not this stuff!

In high school, I was a curvy girl. I wish I had the body I had then — round hips, flat stomach, firm thighs. That girl, sadly, is gone.
Today, I stand before you at 5’7 and 193.1 pounds. Which equals out to a BMI of 30.2, or obese. I don’t feel obese, or think that I look obese, but the numbers don’t lie. We just lie to ourselves.
That’s where the title of this blog comes from. “Fat is fabulous” is a lie fat girls tell themselves to feel better, just like, “well, I don’t look obese” or “black is slimming” or “this cardi will cover my arms.”
AM I FAT? Yes. Am I happy? No.
